Black Bean Soup

Stove top or crockpot

Ingredients 

1 Yellow Onion

2 Cloves garlic

1 Jalapeños (Optional)

2 Tbsp olive oil (if sautéing)

45 oz black beans (3 cans)

15 oz fire roasted diced tomatoes

1 tsp ground cumin (at least, I have used a much as two)

1/2 tsp dried oregano 

1/2 tsp smoked paprika (I use 1 tsp)

Salt to taste 

16 oz corn (1 can)

3/4 cup salsa (I put in whatever is in the fridge)

1/2 cup red bell pepper (I put in one small green pepper)

2 Tbsp lime juice (I usually omit)

1 tsp chili powder

 

 Top with cheddar cheese, sour cream and Fritos

 

Dice the veggies and sauté in a Dutch oven/soup pot

Use a blender or food processor to purée two of the cans of beans

Put the canned veggies and beans into sauté pot 

Bring to boil

Lower to simmer for 1/2 hour

Serve with toppings

 

For a crock pot I just put all ingredients into it without sautéing and cook on low for about 5 hours.
